Equipment

  • Pot
  • 1 Crock Pot Optional, instead of stove-top cooking

Ingredients
  

  • 4 cups mixed beans I use 2 cups of kidney beans, 1 cup of black beans and 1 cup of white beans.
  • 4 cups chicken or beef broth
  • 1 tbsp chili powder
  • 1-2 med onions, diced
  • 4 - 8 cloves garlic, minced
  • 1 tbsp cumin
  • 1 tbsp cilantro, fresh 2 tbsp of dry cilantro will also work.
  • 1 tsp salt
  • tbsp oregano
  • 1 tsp cayenne pepper The Rogue's Death Pepper is also a nice choice.
  • 1-2 bell peppers, diced

Instructions
 

  • Soak the bean mixture in water for 12 to 18hrs
  • After the beans have soaked long enough, drain and rinse them.
  • Add the remaining ingredients to the beans and simmer on stove, or in the crockpot, for 6 to 10 hrs
  • Serve with Mexican rice or any of your favourite side dishes.
