- Slow Cooker
Ingredients
- 2 lb boneless chicken breast, diced
- 6 oz can of tomato paste
- 13.5 oz can of coconut milk
- 1 onion, chopped as desired
- 2 cups your choice of frozen vegetables (such as peas and carrots, or just peas)
- 14.5 oz can of tomato sauce
- 2-5 cloves garlic, minced
- 3 Tbsp honey
- 2 Tbsp curry powder
- 1 tsp salt
- 1 tsp red pepper, crushed
Instructions
To Enjoy Now:
- Prepare the chicken, and place it in the slow cooker.
- In a bowl, combine the tomato sauce, tomato paste, garlic, honey and seasonings. Set aside.
- Add the rest of the ingredients to your slow cooker. Cover with the tomato sauce and seasoning.
- Cook on low for 6 to 8hrs.
- Serve with rice and some naan bread for a delicious meal.
To Freeze for Later Enjoyment:
- Combine all of the ingredients in a gallon size zip-lock freezer bag and freeze for up to 3 months, and possibly longer. When ready to cook thaw in fridge over night. Dump into slow cooker in the morning and start it running.
- When you're nearly ready to cook, thaw the bagged mixture in the fridge overnight.
- Add the thawed ingredients to your slow cooker and set it to cook until you are ready to enjoy it at dinner.
