The Rogue's Best Mac and Cheese Recipe
Ingredients
- 202 gm (or 8oz) uncooked macaroni pasta Your favourite pasta will also work.
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1/2 tsp salt
- ΒΌ tsp garlic powder
- 1 c milk 1% or 2% work best. Higher or lower milk fat percentages will change the taste and texture of the dish.
- 1/4 c sour cream
- 2 c shredded cheddar cheese
Instructions
- Prepare the pasta as directed on the package, then set it aside.
Cheese Sauce:
- Mix together all the dry ingredients in a bowl, then set it aside once they are blended.
- Melt the butter in a medium saucepan, or a large soup pot, depending on how many people you are serving.
- Add the flour, and whisk it into the butter until the mixture is smooth before allowing it to cook until brown.
- Add the milk and the sour cream, again whisking the mixture until it's smooth.
- Cook the sauce over medium heat until it has thickened, but don't let it boil.
- Reduce the heat, and add your cheese a little bit at a time so that it melts easily and blends into a nice, velvety sauce.
- Stir all the pasta into the sauce so that it is completely covered, and serve.
