Jalapeno Roulette Beef Jerky
This beef jerky recipe combines the satisfying saltiness of a good jerky, with an unexpected jalapeno kick.
Ingredients
- 500 gr round steak Make sure it has as little marbling as possible.
- 1 cup soy sauce Any soy sauce is good - even cheap store brands will do.
- 1/2 cup red wine No need to get expensive, here. A cheap red wine, or even your own homemade red will work nicely.
- 1/4 cup red wine vinegar
- 2 tsp balsamic vinegar
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1 tsp dried jalapeno pepper Feel free to add more if you like it spicy.
- 1/8 tsp tabasco sauce Adjust to suit your taste.
- 1/4 to 1 tsp red pepper flakes or Rogue's Death Pepper (optional) A great way to add a bit more kick.
- 1/4-1/2 tsp liquid smoke Adjust to suit your taste.
- 1 tsp maple syrup
- 1/2 tsp garlic powder
- 2 Tbsp dried flaked onions
- 1 tsp honey
Instructions
Preparing the Marinade
- In a large bowl, mix together all of the liquids ingredients and spices, and set it aside.
Preparing the Meat
- Allow the steak to warm up a little as you prepare the marinade.
- When the steak has gotten a bit warmer, slice it thinly and across the grain where-ever possible.
- Place all the meat into the marinade, mixing everything until the meat is well coated.
- Cover the bowl, and place it in the fridge for 24 to 48hrs, stirring once or twice during that timespan. Alternatively, you can pour everything into a large Ziplock bag and seal it up for easy storage, shaking it up a couple of times as needed.
Dehydration
- Place all meat in your dehydrator and set the temperature to between 148 and 160 degrees.
- Dry your jerky for 3 to 6hrs, depending on how dry you prefer it to be. Extend the time as needed.
- If you are using your oven, set the temperature to 150 degrees, and place the meat on a drying rack with a cookie sheet underneath to catch the drippings.
- Once the jerky has dried, pack it into small jars or Ziplock bags.
- You can also choose to vacuum seal portions that will last up to 6months on the shelf, but if your family is anything like mine, your Jalapeno Roulette Beef Jerky won't hang around too long.
