Budget-Friendly Amish Stew

- 1 Dutch Oven or slow cooker
Ingredients
- 4 med potatoes, cubed
- 2 med carrots, diced
- 1 med yellow onion, diced
- 1 14oz can diced tomatoes
- 2 cubes beef bouillon
- 3 cups hot water (Substituting the water and bouillon cubes with your own homemade beef broth will make this recipe taste even better.)
- 1 Tbsp garlic powder
- 1 Tbsp chives (Fresh, minced chives are best if you have them, but dried chives work fine.)
- 1 Tbsp parsley (Fresh minced parsley is best if you have it, but dried parsley works fine.)
- 1 lb ground beef
Instructions
- Brown the ground beef on the bottom of your Dutch oven.1 lb ground beef
- Once the beef is browned, add the carrots, potatoes, onion and diced tomatoes. These veggies contain vitamin C, vitamin A, potassium and folate, which are key nutrients for a healthy body.4 med potatoes, cubed, 2 med carrots, diced, 1 med yellow onion, diced, 1 14oz can diced tomatoes
- Make beef broth by adding the bouillon cubes to 3 cups of hot water, and mix until they are dissolved. If you have homemade beef broth, use that for a richer flavour. - Simmer on low for 3hrs. Stir and serve it up with some delicious Rogue's Corn Bread.3 cups hot water
