Rogues Roman Chicken

Equipment

  • 1 Large skillet or dutch oven

Ingredients
  

  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup olive oil
  • 391 ml can of diced tomatoes
  • 1 med bell pepper, sliced
  • 1 med onion, sliced
  • 1 med carrot, julienned
  • 1 jalapeno pepper, diced
  • 3 oz chorizo, diced
  • 2-5 cloves garlic, minced
  • ½ cup red wine
  • 1 tbsp thyme
  • 1 tsp oregano
  • 1 cup broth (chicken or beef)
  • 2 tbsp capers
  • Parmesan cheese (optional) Add a sprinkle, if you like, before enjoying your Roman Chicken.

Instructions
 

  • To begin, thaw the chicken and pat it dry.
  • Lay the chicken out on a plate, skin side up, and season it with the salt and pepper. Set it to the side.
  • Prepare all your vegetables as directed.
  • In a heavy skillet, warm the olive oil over medium heat until it is hot.
  • Place the chicken in the skillet, skin side down, and fry until it is crispy and nicely browned.
  • Flip the chicken, and fry the other side.
  • Once the chicken is browned on both sides, remove it from the skillet and set it aside on a plate. Leave the juices in the skillet.
  • Using the same skillet, add the onions, bell pepper, jalapeno and carrots, and fry until they start to get crispy.
  • Add the sliced chorizo, and cook everything over medium heat for 5-7 minutes until it is all browned.
  • Add the garlic, tomatoes, red wine and herbs, stir well and let the mixture simmer for a minute or so to let the flavours blend together.
  • Place the chicken in the skillet, crispy skin side up.
  • Pour in the chicken or beef broth and stir it a little.
  • Cover the skillet, and allow the chicken and vegetables to simmer for 20 to 30 minutes, or until the chicken is cooked through.
  • Turn off the heat, and stir in the capers.
  • Serve with rice, spreading the sauce over everything, and sprinkle with Parmesan cheese.
