  • 1 8×12 Casserole Dish
  • 1 measuring cup
  • 1 Bowl

Ingredients
  

  • 1½-2 lb Chicken any or all of the following legs, thighs, breasts, backs
  • cups rice
  • ½ cup Coconut Milk
  • ½ Cup Chicken or Beef stock
  • 1 can Condensed Mushroom Soup
  • ½ – ¾ Cup Water
  • 1 Tbsp rosemary
  • 2 tsp Thyme
  • 1 tsp salt
  • ½ tsp Pepper
  • 4 cloves Garlic chopped
  • 4 Mudrooms sliced
  • ½ med Onion sliced
  • ½ med Bell pepper sliced any color you like
  • ½ cup Grated Cheddar Cheese

Instructions
 

  • Preheat oven to 350℉
  • Pour rice into 8×12 casserole dish and even out
  • Whisk / Mix together in a bowl the following Coconut Milk, Chicken or Beef stock, Condensed Mushroom Soup, Water.
  • The add all the spices, garlic, mushrooms, onion, bell pepper into the mix and stir well.
  • Pour this mix onto the rice in the casserole dish and stir well leveling out the rice.
  • Now place/arrange your chicken on top pushing it to the bottom of the dish leaving space between each piece.
  • Place dish in oven and cook for 30min then pull out briefly and add the cheddar cheese to the top and cook for an additional 15min.
  • Verify chicken is fully cooked by checking internal temperature or poking with toothpick to see clear fluid running out.
  • Remove from oven and let sit 5 min then serve and enjoy.
